  1. For the first layer, soak the sultanas, raisns and dates in orange juice and lemon juice for 2 hours
  2. For the second layer, soak the apriots in the orange and lemon juice for 2 hours.
  3. Simmer the apricots and fruit juice with the cinnamon stick for about 40 minutes or until the apricots are soft.
  4. Remove the cinnamon stick, beat the apricots to a puree and stir in the ground almonds.
  5. Simmer the sultanas, raisana and dates in the apple juice, orange juice, lemon juice, and nutmeg for about 40 minutes or until thick and syrupy.
  6. Stir in the rum or brandy and the chopped almonds.
  7. Stir the brandy into the whipped cream foe the third layer.
  8. Line a round pudding basin with cling film and build the pudding up in layers beginning with the sultana and raisin mixture followed by the apricot mixture and lastly the whipped cream, making sure you end with a layer of the dark mixture on the top.
